Edible Flowers - Phlox
The perennial phlox is the only type that is edible. These beauties have an amazing scent and look so cute crystalised on cakes and desserts or floating in summer drinks. Their flavour is sometimes described as slightly spicy but I find them quite sweet, a bit like sugarsnap peas. Either way, they are just lovely.
Colours: Pinks, white
Flowering time: Late summer, early autumn
Ideas for use: Eaten whole in sweet and savoury dishes, crystalised for cakes and sweets, cocktails, canapes
