Edible Flowers - Calendula
Calendula's claim to fame is that it makes a fabulous saffron substitute but this edible flower has so much more to offer. Only the calendula petals are eaten from this plant and when separated from the flower head they make very pretty food confetti indeed. Their mild flavour means they complement both sweet and savoury dishes.

Ideas for use: Ice cream sprinkles, floral ice cubes, salads, fritattas, in rice and cous cous, cake decoration.
